Fresh Bites: Sloppy Joy

Sloppy JoyWe all recognize the need to incorporate more fresh fruits and vegetables into our diets, and cut back on processed foods; the question is how. Chef Joy Houston, who specializes in raw cuisine, has some simple twists on favourite meals that normally involve highly processed foods. Her three recipes substitute processed cereal with apple granola; sloppy joe in a can with a vegan, raw alternative that is full of fibre-rich veggies; and a gluten-free "pasta" dinner that is ready faster than you can boil a stock pot of water.

Sloppy Joy

A vegan, raw version of the messy, meaty sloppy joe, this recipe makes a quick meal with the savoury tang of barbecue sauce, but without all the chemical preservatives and saturated fats in the canned variety.

Ingredients:

½ cup almonds (soaked overnight, drained and rinsed)
½ cup walnuts (soaked overnight, drained and rinsed)
1 clove garlic
2 green onions (whites and greens)
2 small carrots
1 stalk celery
BBQ sauce to taste

Process garlic, carrot, celery, onions and nuts in a food processor until minced. Add 3 tablespoons BBQ sauce and process to combine. Season to taste with additional BBQ sauce and fresh cracked black pepper. This is fabulous served slightly warmed on Ezekiel toast or flax crackers, topped with tomato, avocado and lettuce.
